1/2cupChopped Picked Onions and Green onionsfor the garnish

Instructions
Chop the onions finely.
Heat a Tbsp of oil in a skillet and add the chopped onions. Let the onions brown well and add the tomato paste.
Time to add in the Abott's Butcher Chorizo. Sauté it on low heat for 5 minutes, then add the spices ( garlic powder, coriander powder, garam masala and chili powder) . Add 1/2 a cup of water and give it a good stir.
Now add in the boiled/canned chickpeas and let them cook for 5 more minutes, stirring occasionally. I did not need to add salt to this as the “Chorizo” already had enough salt based on my preference. Let it cool.
To assemble the lettuce wraps , wash a pat dry a few large pieces of lettuce.
Fill these with the chorizo chickpea mix. Garnish with picked onions and/or green onions. Finally drizzle with your favorite Vegan dressing or chutney.
