Since peas were recently added to the compatible list of Whole30 foods, I wanted to create a simple vegetarian dish with lots of flavor. Here is a simple wholesome vegetarian/vegan Indian Whole30 story fry dish made with Peas and Tri-color bell peppers. Ingredients
- 1 bag frozen peas
- 1 Red Bell Pepper
- 1 Yellow Bell Pepper
- 1 Green Bell Pepper
- 1 medium While Onion
- 1 tsp cumin seeds
- 1.5 tsp Coriander Powder
- 1 tsp Garam Masala
- 2 Tbsp Lemon Juice
- Salt
- Avocado Oil
Recipe
Chop the onions and bell peppers small pieces. You can use any color bell peppers but using three different colors give the dish a beautiful color and flavor.
Heat your pan for a few minutes and add the oil. Next we add the cumin seeds. When the seeds start the sizzle, add the chopped onions and stir for a few minutes.
Add the bell peppers and give it a good stir till the edges star browning. Add the frozen peas, stir and cover the pan to let the veggies soften up as they steam. Remove the lid a few times to stir the veggies so they don’t stick to the bottom of the pan. You can sprinkle a little water if needed. The veggies should be cooked in about 10 minutes.
Remove the lid and add the coriander powder, garam masala, lemon juice and salt. Sauté for a few minutes and the dish is ready to serve.
