Gluten-Free Recipes, Plant Based Whole30/ Vegan Recipes, Whole 30 Recipes

Since peas were recently added to the compatible list of Whole30 foods, I wanted to create a simple vegetarian dish with lots of flavor. Here is a simple wholesome vegetarian/vegan Indian Whole30 story fry dish made with Peas and Tri-color bell peppers. This is the excerpt from the Whole30 article which talks about why these were added as a Whole30 compatible food (https://whole30.com/whole30-rules-peas/ )

“While botanically a legume, over the years I have rarely seen peas present problems upon reintroduction. Most varieties of peas are lower in FODMAPs and phytates than other forms of legumes, and pea protein is considered a hypoallergenic protein source by functional medicine doctors. “

Peas and Peppers

Ingredients

  • 1 bag frozen peas
  • 1 Red Bell Pepper
  • 1 Yellow Bell Pepper
  • 1 Green Bell Pepper
  • 1 medium While Onion
  • 1 tsp cumin seeds
  • 1.5 tsp Coriander Powder
  • 1 tsp Garam Masala
  • 2 Tbsp Lemon Juice
  • Salt
  • Avocado Oil

Recipe

Chop the onions and bell peppers small pieces. You can use any color bell peppers but using three different colors give the dish a beautiful color and flavor.

Heat your pan for a few minutes and add the oil. Next we add the cumin seeds. When the seeds start the sizzle, add the chopped onions and stir for a few minutes.

Add the bell peppers and give it a good stir till the edges star browning. Add the frozen peas, stir and cover the pan to let the veggies soften up as they steam. Remove the lid a few times to stir the veggies so they don’t stick to the bottom of the pan. You can sprinkle a little water if needed. The veggies should be cooked in about 10 minutes.

Remove the lid and add the coriander powder, garam masala, lemon juice and salt. Sauté for a few minutes and the dish is ready to serve.
