Minced Lamb and Spinach Curry

Gluten-Free Recipes, Whole 30 Recipes

A delicious lamb curry cooked with aromatic spices and a light coconut gravy is rich in taste. Just add some baked potatoes and salad or riced vegetables to make it a complete meal.

Recipe

  • 1/2 minced onion
  • 2 finely chopped tomatoes
  • 1 cup chopped spinach
  • 1lbs of grass fed minced lamb
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • 3 tsp dry red chili powder
  • 2 tbsp coriander powder
  • 1 tsp cumin powder
  • 1/2 tsp turmeric powder

For grinding

  • 1/4 cup desiccated coconut or fresh coconut meat
  • 1 tsp cumin seeds

(grind this into a fine paste with a little bit of water)

For garnish

  • Cilantro/spring onion

Cooking Procedure

  1. Heat up oil in a pan and add cumin seeds and fennel seeds
  2. Add the onions and saute them till translucent or soft
  3. Add the tomatoes and saute till they are soft
  4. Add the minced lamb and saute for 5 minutes
  5. Add the turmeric powder, red chili powder and the coriander powder
  6. Saute everything for a couple of minutes
  7. Add the 2 tsps of salt
  8. Add 2 cups of water and bring it to a boil
  9. Once it starts cooking reduce the flame or heat to a medium and cover it with a lid and let it cook for 20 minutes or till the meat is thoroughly cooked.
  10. once the meat is fully cooked add the chopped spinach and cook for another five minutes.
  11. Finally add the ground paste of coconut and the cumin and let it cook till the bubbles appear.
  12. Switch off the stove and garnish with cilantro
  13. I didn’t have any cilantro due to the current situation so used spring onion instead.

Ingredients
  

Main Ingredients

  • 1/2 Onion (minced)
  • 2 Tomatoes (finely chopped)
  • 1 cup Spinach (chopped)
  • 1 lb Minced Lamb
  • Cilantro or Spring Onion (to garnish)

Spices

  • 1 tsp Cumin Seeds
  • 1 tsp Fennel Seeds
  • 3 tsp Red Chili Powder (quantity can be adjusted based on heat tolerance)
  • 2 tbsp Coriander Powder
  • 1 tsp Cumin Powder
  • 1/2 tsp Turmeric Powder

Ingredients For Grinding

  • 1/4 cup Desiccated coconut or fresh coconut
  • 1 tsp Cumin Seeds

Instructions
 

  • Heat up oil in a pan and add cumin seeds and fennel seeds
  • Add the onions and saute them till translucent or soft
  • Add the tomatoes and saute till they are soft
  • Add the minced lamb and saute for 5 minutes
  • Add the turmeric powder, red chili powder and the coriander powder
  • Saute everything for a couple of minutes
  • Add the 2 tsps of salt
  • Add 2 cups of water and bring it to a boil
  • Once it starts cooking reduce the flame or heat to a medium and cover it with a lid and let it cook for 20 minutes or till the meat is thoroughly cooked.
  • Once the meat is fully cooked add the chopped spinach and cook for another five minutes.
  • Grind the coconut and cumin seeds together ( from ingredients for grinding section above)
  • Add the ground paste of coconut and the cumin and let it cook till the bubbles appear.
  • Switch off the stove and garnish with cilantro or spring onion
