What is a Vegan/ Plant Based “Chorizo”?
Abbot’s butcher Chorizo is a plant based pea protein made by Abbot’s Butcher which is a Whole30 approved partner. It has super clean ingredients and is gluten free as well as certified vegan. It does not have any preservatives or additives and what I really like about it is that it is already flavored with spices like paprika, cumin, chili powder and onion powder which go very well with the flavor profile of Indian food. How to make the “Chorizo” Chickpea Lettuce Wraps
This recipe was an experiment which, if I may say so, was a major success. This “Chorizo” pairs beautifully with the chickpeas and warm Indian spices and aromatics for a delicious lettuce wrap. It comes together in less than 15 minutes. Top it with your favorite Vegan Dressing or Chutney. Try these wraps and tell me you didn’t end up wanting more! These would be a great addition to your next PB whole30!

Vegan “Chorizo” Chickpea Lettuce Wraps
Ingredients
- 1 pack Abbot's Butcher "Chorizo" Pea Protein
- 1/2 cup boiled or canned chickpeas/garbanzo beans
- 1/2 medium onion
- 2 Tbsp tomato paste
- Avocado Oil
- 1/2 cup Chopped Picked Onions and Green onions for the garnish
Spices
- 1 tsp coriander powder
- 1 tsp garam masala
- 1/2 tsp chili powder optional
- 1/2 tsp garlic powder
Instructions
- Chop the onions finely.
- Heat a Tbsp of oil in a skillet and add the chopped onions. Let the onions brown well and add the tomato paste.
- Time to add in the Abott’s Butcher Chorizo. Sauté it on low heat for 5 minutes, then add the spices ( garlic powder, coriander powder, garam masala and chili powder) . Add 1/2 a cup of water and give it a good stir.
- Now add in the boiled/canned chickpeas and let them cook for 5 more minutes, stirring occasionally. I did not need to add salt to this as the “Chorizo” already had enough salt based on my preference. Let it cool.
- To assemble the lettuce wraps , wash a pat dry a few large pieces of lettuce.
- Fill these with the chorizo chickpea mix. Garnish with picked onions and/or green onions. Finally drizzle with your favorite Vegan dressing or chutney.
