This quick Gluten Free Diwali dessert recipe comes together in under 10 minutes with just four ingredients. If you live outside India, you will relate to this. Diwali often falls on a weekday, it’s not a holiday. Celebrations often get postponed to weekends but a cozy little celebration at home on the actual Diwali day makes you feel connected to your roots . At the end of the work day, if you are scrambling to make a treat or two, this recipe is for you. It’s so delicious and almost feels decadent with minimal effort. I used pecan butter to stuff the dates and it is a game changer but you can use another nut butter or choice like cashew/almond/hazelnut butter. Trust me you will want to make this on repeat.
Ingredients
- Pitted dates (Preferably mejdool)
- Pecan nut butter from @georgiagrinders ( or nut butter or choice)
- Roasted Pistachios, salted
- Dried shredded coconut

Pistachio Pecan Stuffed Dates
Ingredients
- 12 dates, pitted Preferably Mejdool
- 6 tsp Pecan Nut Butter or nut butter of choice
- 1 palmful Pistachios, crushed
- 1 palmful Dried shredded coconut
Instructions
- Spread dates on a platter. Remove pits if you are not using pitted dates
- Scoop about 1/2 tsp of pecan nut butter into each date
- Top generously with crushed pistachios and dried shredded coconut
